Poached Salmon

5 min poach time. Use Stainless steel pan with lid.

Being to a boil over medium heat:

Juice 1 lemon and cut into slices

1/2 C white wine

1 thin sliced shallot

2 minced garlic cloves

2 sprig parsley

(can add thin sliced fennel)

Slice a 1 to 1.5 lb piece salmon into 2-3 pcs. Place salmon into liquid in pan, lower heat to simmer. Cover. cook 5 minutes (or more until flakes with fork) plate pieces, drizzle with olive oil (optional)
