Simple ingredients: butter, shallots, red wine, balsamic vinegar, rosemary.

Med Hi heat sauté for 3 minutes:

  • 2 TB butter
  • 2 shallots chopped

Add:

  • 2/3 Cup red wine
  • 1/3 Cup balsamic vineagr
  • 2 TB finely chopped rosemary

Boil, reduce by half

Notes: great with grilled flank or skirt or hanging tender steaks, venison, etc.

 

Cyberspace Dressing

From Sallye Helder, Kauai 1999. Makes 2 Cups.

  • 2 tsp Honey Dijon mustard
  • 2 tsp Dijon mustard
  • 1 tsp salt
  • 2 tsp Cavender’s all purpose greek seasoning
  • 1 tsp sugar
  • 2/3 C Balsamic vinegar
  • 1 C olive oil
  • 1/3 C canola oil
  • 4 cloves crushed garlic
  • onion flakes to taste

Whisk all ingredients together, refrigerate.
