classic waldorf salad
- 3 apples chopped
- ½ C golden raisins
- ½ C walnuts
- 1 C celery
- chicken (optional)
- ½ C mayo
- 1 tsp lemon juice

Very easy, quick, QED
- 1 C farro, brown in pan, add a sprig thyme to water to cook Farro. Drain
ADD
- Chèvre
- walnuts
- cucumber – quarter lengthwise, slice
- red pepper
- dried cherries
- Tuscan Kale
- s & p
Kale pork chops

4 – bone in pork chops
- Heat 2TB olive oil in cast iron skillet med-hi. When oil is shimmering, add pork chops, sear, golden brown 2 min per side.
- Put pan in oven, bake 10-15 min (until thermometer in pork chops – 150°). Remove, let rest covered 10 min.
2 bunches stemmed, chopped Kale
- Boil water in med size lidded pot.
- Add chopped kale to boiling water. Blanch 2 min (bright green)
- Drain and toss dry.
1 thinly sliced red onion, 2 cloves garlic, ¾ C chopped toasted walnuts & 1 chopped jalapeño
- In dry pot, med-hi, add 2 TB olive oil, garlic and onions. Sauté until onions cartelized ( 6min).
- Stir in walnuts & jalapeño, cook 3 min.
¾ C chopped basil, ¼ C chopped fresh mint, 1½ C pomegranate seeds
- Add cooked kale and herbs to onion mixture in pot. Cook 4 min until softened. S&P to taste
- Remove from heat, add half of pomegranate seeds.
Divide kale/herb mixture onto plates, top with pork chops, sprinkle remaining pomegranate seeds and drizzle some olive oil.

Simple kale:
remove Kale from stems, tear, heat in pan (with oil) until bright green
Add roasted walnuts
top with cranberries or pomegranate seeds
Walnut Pasta Salad

California Walnut Pasta Salad. Great as side dish with chicken or ham or as a vegetarian entree. Serves 6.
- 3 C Rotelle uncooked (cook as per package directions)
- 1/2 C Golden Raisins (soak in hot water 5 minutes, drain)
- 3/4 C chopped walnuts (toast 350° for 8 mins)
- 5 TBs olive oil
- 2 garlic cloves crushed
- 2 1/2 C chopped spinach
In large stainless pan, Heat olive oil & cook garlic 1 minute. Add spinach, cook 3 mins to wilt spinach.
- 1/2 tsp each: salt, pepper
- 1/2 C sun dried julienned tomatoes in oil (drained)
Mix, toss all ingredients together.
