Spanish Potato Omelette

  • 1 LB (yukon gold) potatoes sliced.
  • 4 eggs well beaten
  • 1 onion diced or thin slices
  • 3-4 TB olive oil/butter
  • chives

Heat 2 TB oil in large pan, add potatoes & onion, cook med heat until softened about 15 min. Remove from heat.

Combine eggs and potatoes in bowl, return to fry pan with 1 TB oil & 1 TB butter, cook med low heat  2 min until set.

Turn omelette over (use another pan or plate) and continue cook 1 min.

Sprinkle chopped chives on top.

 

Tapas chicken drumsticks

  • 2 – 3 lbs chicken drumsticks
  • seasoned flour to coat chicken pieces

Toss chicken & coat in flour

  • ¼ C olive oil
  • 2 TBs butter

Heat oil & butter in cast iron pan, cook chicken until golden, turning to seal all sides.

  • ½ C white wine
  • ¼ C chicken broth
  • 3 tsp  crushed garlic
  • 1 TBs chopped parsley

Add wine, broth, garlic & parsley to pan, simmer to reduce liquid by half.

  • 1 TB sherry
  • 1 Tbs brandy

Last, add sherry & brandy. Refrigerate/freeze , reheat in oven. Garnish with fresh chopped parsley.

Moorish Kabob Tapas Marinade

From our tapas dinners, use Trader Joe’s pork loins (about 1 lb each). Skewer meat. Grill on BBQ or under broiler 3 min per side. Serve with lime wedges.(4-5 servings)

  • 2 garlic cloves chopped fine (or use frozen garlic from Trader Joes)
  • 2 tsp salt

Mix garlic and salt together. Add following ingredients to make marinade:

  • 1 tsp mild curry powder
  • ½ tsp coriander seeds
  • 1 tsp paprika
  • ¼ tsp dried thyme
  • fresh ground black pepper
  • 3 Tbs olive oil
  • 1 Tbs lemon juice

Skewer cubed meat, lay out in pan or shallow dish, cover with marinade, at least a few hours (we did overnite).

  • 1 lb lean pork (loin- cut into small cubes)
