Swedish Almond Cake

Inger’s? 1960s. Preheat oven 350°

Grease spring pan.

Mix together:

  • 7 1/2 oz almonds ground
  • 1 C sugar

Fold in whipped egg whites to almond mixture.

  • 4 egg whites hard whipped.

BAke in 350° for 35 minutes, then increase to 400° for 10 minutes.

cool before removing from pan.

top with 1 can pears, top with whipped cream or other fresh berries….

Puff pancake

Sunset 1990s. Preheat large 12″ cast iron pan in 425° Oven. Serves 4

While pan heats in oven, mix batter:

  • 4 eggs
  • 1 C milk
  • 1 C flour

When oven reached temperature, remove pan, add 1/4 C butter, let melt. Add batter.

Bake 20 -25 min.

Optional topping: mango & marmelade, raspberry

  • melt 2 TB butter
  • stir in 3 TB orange marmelade
  • add 1 Tb lemon juice
  • add 2 mangoes cut into 1/2 inch pieces, cook 5 min.
  • add raspberries.

Kielbasa stew

Simple fast & tasty. Cook together, simmer  covered pot 1/2 hour.

  • 2 lb(?) ring of kielbasa cut into bite size slices
  • 2 -16 oz cans red kidney beans, drained, rinsed
  • 2  – 24 oz or 3 -16 lb cans chopped tomatoes & juice
  • 1 can black beans, drained, rinsed.
  • optional – add 1 C fire roasted yellow corn

Serve with chopped green onions, salsa

Belgian Stew

Carbonades a la Flamande. Bake 2 hours in covered 6-8qt cast iron casserole, 325°

In large cast iron frying pan, prepare meat. Dredge beef in flour mixture, brown meat in batches using 1/2 C oil. Move browned beef to casserole.

  • 4 lbs lean beef cut into 1/2″ cubes
  • 1/2 C flour

Brown onions & garlic in frying pan. Move to casserole

  • 2 lbs onions either chopped or thin sliced wedge shape.
  • 6 garlic cloves minced

Add liquids to frying pan to loosen bits, add to casserole.

  • 2 1/2 C consome broth (2 – 10.5 oz cans)
  • 3 Tb dark brown sugar
  • 1/4 C red vinegar
  • 2 tsp fresh thyme
  • 2 small bay leaves
  • 1 TB salt fresh black pepper

Add beer to casserole ( 3C or 2-12oz Chimay ale). Add 1/2 C chopped parsley.

Gus’ Chicken

UC Davis From 1970s Gus Lee’s chicken.  preheat oven 350°

  • 1/2 C oil
  • 1/2 C soy sauce
  • 1/2 C brown sugar
  • 1 -2 clove pressed garlic
  • chopped onion
  • chicken pieces cut up

Bake 1 hour, serve with rice, vegetables.

Risotto Oven baked

Arborio Rice, from Mari Betta (Ben’s mother) serves 4-6. Preheat oven 375°, Bake 25 min.

  • Saute 1/4 C chopped onion in 1/4 c olive oil until softened.
  • Add 1 C rice to pan, stir until coated.
  • Add 2 C chicken broth, bring to a boil.
  • Transfer to baking dish, cover with foil.
  • Optional – after 20 min, take out, add 1/2 C green peas, Bake 5 min more.

 

Salad Biard Nice

from Biard’s in Nice 2001. Very refereshing on hot summer day.

Cut vegetables into triangle shape bites.

  • 2 large tomatoes
  • 1 English cucumber (cut in quarters, lengthwise, then into bite size triangle pieces)
  • 1 red pepper
  • bunch cooked white asparagus
  • 1 finely chopped medium red onion
  • some leaves of chopped fresh mint
  • artificial crab meat or tuna

Simple Dressing

  • 3 TB oil
  • 1 1/2 TB lemon juice
  • 2 tsp Dijon mustard
  • 2 tsp red wine vinegar

VINAIGRETTE

  • 1 TB red wine vinegar
  • 4 TB oil
  • 1 tsp soy
  • 1 tsp Dijon

Cole Slaw

Bobby flay(?) Nice tangy slaw

Shred or slice fine:

  • 1 med head cabbage (slice very fine)
  • 2 large carrots (shred)

Mix dressing

  • 3/4  C mayo
  • 2 TB sour cream
  • 2 TB minced red onion
  • 2 TB sugar
  • 2 TB cider vinegar
  • 1 TB dry mustard
  • 2 tsp celery salt

Christmas Snow Pea Salad

Serves 8, nice red, green, white colors. 1987 Betsy Bowersox.

  • 1 1/2 LB fresh snow peas (boil 30 sec, cool in ice water bath to stop cooking)
  • 1 can 4 oz sliced water chestnuts
  • 1 basket (2C) cherry tomatoes cut in half
  • 4-6 green onions, sliced diagonanl
  • Fresh shrimp (optional)

Dressing:

  • 1/3 C salad oil
  • 1/4 C rice wine vinegar
  • dash salt & pepper (I use white pepper)

Evelyn’s Salad Dressing

Makes 1 Cup

  • 1/3 C lemon juice
  • 1/3 C catsup
  • 1/3 C salad oil
  • tsp vinegar
  • dash worcestershire
  • pressed clove garlic
  • s & p
  • dash sugar

Notes: use a little orange juice with or instead of lemon juice.
